Homemade Caramel Apples
The best part of Homemade Caramel Apples is the way gooey caramel mixes with the juicy sweetness of organic apples. Fall won't feel complete without Homemade Caramel Apples.
Homemade Caramel Apples 16 wooden sticks (i.e. popsicle sticks or wooden chopsticks) 16 small apples, chilled 2 cups granulated sugar 1/2 cup light-colored corn syrup 1/2 cup water 2 cups half-and-half 2 teaspoons vanilla extract 1/4 teaspoon salt
Push wooden sticks into the tops of chilled apples, and return to the refrigerator until the caramel is ready for dipping. Place sugar, corn syrup and water in a saucepan and bring to a boil, stirring until dissolved. Boil without stirring until light golden (about 9 minutes). Combine the half-and-half, vanilla and salt. Slowly stir the half-and-half mixture into the pan. Boil until candy thermometer reads 235 degrees F (about 45 minutes), stirring frequently. Pour caramel into a bowl sitting in a hot water bath. Swirl apples in the caramel, and place on a baking sheet lined with wax paper to cool and set.
