Grapefruit Sorbet
Grapefruit Sorbet is a fresh and light way to finish a meal. Sweet and juicy Rio Star grapefruit will create outstanding Grapefruit Sorbet.
Grapefruit Sorbet 2 Rio Star grapefruit 1 cup (or less, to taste) sugar 1/4 cup light corn syrup 4 cups water
Use a vegetable peeler to remove three long strips of grapefruit zest, and set aside. Squeeze 2 cups of grapefruit juice. In a saucepan, combine zest, sugar, corn syrup and water. Bring to a boil, stirring to dissolve sugar, and cook for 2 minutes. Set aside to cool. Strain grapefruit juice to remove pulp; discard pulp. Stir sugar syrup into the grapefruit juice. Pour into ice cream maker and freeze according to instructions. If you don't have an ice cream maker, pour the mixture into a 9-inch square baking dish, cover and freeze. Stir occasionally until partially frozen (about 4 hours). Transfer to a blender or food processor and blend until smooth but still frozen.
