Fresh Peach Pecan Pie

This Fresh Peach Pecan Pie uses the rich flavor of fresh peaches combined with the nuttiness of pecans. Packed with Colorado peaches, your family is sure to be delighted by this Fresh Peach Pecan Pie.

Fresh Peach Pecan Pie
3 egg whites beaten stiff
1 c sugar
1 tsp vanilla
16 crushed soda crackers
1/4 tsp baking powder
1/2 c chopped pecans
Sliced fresh peaches
1 c sweetened whipped cream

Add the sugar and vanilla to the beaten egg whites. Fold in the remaining ingredients. Spread in a buttered pie plate. Bake at 350 degrees until puffed and browned. Cool completely. Steep the pie shell full of freshly sliced peaches. Cover with whipped cream, and sprinkle with pecans.
