Blueberry Coffeecake
This Blueberry Coffeecake recipe was shared with us by our friend Mike. His mother perfected this recipe, and we're happy to share this amazing Blueberry Coffeecake recipe with you.
Blueberry Coffeecake 1/8 cup sugar 1/2 cup shortening or butter 2 eggs 3/4 cup milk 3 cups flour 3 teaspoons baking powder 1/2 teaspoon salt 2 - 2 1/2 cups blueberries
Preheat oven to 350 degrees F. Combine the sugar, shortening, eggs and milk. Mix well. In a small bowl, mix together the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and mix. Fold in blueberries. Make the crumble topping:
For the crumble topping: 1/2 cup sugar 1/3 cup flour 1/4 cup butter, softened 2 teaspoons cinnamon
In a bowl, combine all ingredients. Cut with a fork or pastry cutter until crumbly. Sprinkle over cake batter. Bake for 40 minutes or until a knife inserted into the center of the cake comes out clean.
