Fresh Peach Pecan Pie

Ingredients
3 egg whites beaten stiff
1 c sugar
1 tsp vanilla
16 crushed soda crackers
1/4 tsp baking powder
1/2 c chopped pecans
Sliced fresh peaches
1 c sweetened whipped cream

Directions
Add the sugar and vanilla to the beaten egg whites. Fold in the remaining ingredients. Spread in a buttered pie plate. Bake at 350 degrees until puffed and browned. Cool completely. Steep the pie shell full of freshly sliced peaches. Cover with whipped cream, and sprinkle with pecans.



Peach Crisp
Adapted from Ann's Blueberry Crisp, this Peach Crisp is delicious with some frozen blueberries mixed in.

Ingredients
4-5 c peaches, chopped, with the skin left on
3 tbsp unbleached all-purpose flour
2/3 c sugar
1/2 tsp cinnamon
1 recipe crisp topping (recipe below)

Directions
Preheat oven to 375 degrees. Toss the peaches, flour, sugar and cinnamon together in a bowl. Dump this mixture into an 8"x10" baking pan and spread it out evenly. Sprinkle the crisp topping over the fruit, covering the entire surface. Place the pan on the center rack in the oven and bake for 30-35 minutes, or until the topping is browned and the fruit juices bubble up through the topping.

Crisp Topping
1/2 c unbleached all-purpose flour
1/2 c packed light brown sugar
2 oz (1/2 stick) cold unsalted butter
1/2 c walnuts, coarsely chopped

Directions
Dump the flour and the brown sugar into the bowl of a food processor fitted with a metal blade and pulse until just blended together. Add the butter and use the pulse button to cut the butter into the flour mixture. Stop pulsing when the mixture is the texture of fine crumbs.



Blueberry Crisp

Ingredients
3 pints fresh blueberries
3 tbsp unbleached all-purpose flour
2/3 c sugar
1/2 tsp cinnamon
1 recipe crisp topping (recipe for crisp topping above with Peach Crisp recipe)

Directions
Preheat oven to 375 degrees. Toss the blueberries, flour, sugar and cinnamon together in a bowl. Dump this mixture into an 8"x10" baking pan and spread it out evenly. Sprinkle the crisp topping over the fruit, covering the entire surface. Blueberry Coffeecake
An unbeatable recipe perfected by our friend Mike's mother

Ingredients
1/8 cup sugar
1/2 cup shortening or butter
2 eggs
3/4 cup milk
3 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
2 - 2 1/2 cups blueberries

Preheat the oven to 350 degrees F. Combine the sugar, shortening, eggs and milk. Mix well. In a small bowl, mix together the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and mix. Fold in blueberries.

Crumble Topping
1/2 cup sugar
1/3 cup flour
1/4 cup butter, softened
2 teaspoons cinnamon

In a bowl, combine all ingredients. Cut with a fork until crumbly. Sprinkle over the cake batter. Bake for 40 minutes, or until a knife inserted into the center of the cake comes out clean.



Blueberry Pie - by Ann, winner of our Best Recipe Contest

Ingredients
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
4 cups fresh blueberries
9-inch double pie crust
1 tablespoon butter

Directions
Preheat oven to 425 degrees F. Mix sugar, cornstarch, salt and cinnamon, and sprinkle mixture over blueberries. Line pie dish with one pie crust. Pour berry mixture into the crust and dot with butter. Cut remaining pastry into 1/2-3/4-inch wide strips and make lattice top. Crimp and flute edges. Bake pie on lower shelf about 50 minutes, or until crust is golden brown.




Oatmeal Blueberry Applesauce Muffins

Ingredients
1 1/4 cups whole wheat flour
1 1/4 cups oats
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1 c unsweetened applsauce
1/2 c low-fat buttermilk
1/2 c firmly packed brown sugar
2 tbsp canola oil
1 large egg, lightly beaten
3/4 c blueberries, fresh or frozen

Directions
Preheat oven to 375 degrees. Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray. In a large bowl, combine flour, oats, baking powder, baking soda, salt and cinnamon. In a medium bowl, combine applesauce, buttermilk, sugar, oil and egg. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in blueberries. Fill muffin cups 2/3 full. Bake 16-18 minutes.

Strawberry Orange Spinach Salad

Ingredients
12 c baby spinach
2/3 c green onions
2- 8 oz cans mandarin oranges, or 1 c. peeled, sectioned and sliced Cara Cara oranges
1 c strawberries, sliced
1/4 c orange juice
1/4 c honey
2 tbsp vegetable oil
2 tsp Dijon mustard

Directions
In a small bowl, whisk together the orange juice, honey, vegetable oil and mustard. Toss spinach, oranges, strawberries and onions in a large salad bowl. Drizzle with dressing and toss to coat, or serve salad and dressing separately.



Clementine Salad with Spiced Walnuts and Pickled Onions

Onions
1/2 c water
1/2 c red wine vinegar
1/4 c sugar
1 c vertically sliced red onion

Dressing
1 tbsp fresh-squeezed orange juice
2 tsp olive oil
1 tsp Dijon mustard

Salad
8 c gourmet salad greens
2 c clementine sections (about 6 clementines)
3/4 c spiced walnuts
6 tbsp Craisins

Directions
To prepare onions, combine first 3 ingredients in a small saucepan. Bring to a boil; remove from heat. Reserve 2 tablespoons vinegar mixture. Combine remaining vinegar mixture and onion in a small bowl; cool to room temperature. To prepare dressing, combine reserved 2 tablespoons vinegar mixture, fresh-squeezed orange juice, oil, and mustard; stir well with a whisk. Combine dressing and salad greens in a large bowl; toss well to coat. Divide salad greens mixture evenly among 6 salad plates. Top each with 1/3 cup clementines, about 2 tablespoons onions, 2 tablespoons spiced walnuts and 1 tablespoon Craisins.



T-Bone's Apple Pudding

Ingredients
2c apples- stewed
1c brown sugar
1c sifted flour
2tsp baking powder
1/4tsp salt
1/4tsp cinnamon
1c milk
1/2c butter

Directions
Melt butter in 2quart casserole. Combine all remaining, except apples, to make a batter. Pour batter over melted butter in casserole. Pile apples in center of batter. Bake at 350 degrees until batter covers fruit and crust browns. 

Makes 6 servings.
